Spaghetti
INGREDIENTS...
200 gram spaghetti
olive oil
3 cloves garlic - crushed
1 onion - diced
500 gram mince beef
1 can whole tomatoes (Roma is better)
1 can tomato puree or tomato sauce (optional)
1 carrot - thinly sliced
black olives - chopped
mushrooms - sliced
dried oregano
dried parsley
salt and pepper
DIRECTIONS...
Cook spaghetti in a boiling water together with a little bit of salt and olive oil to prevent stickiness. When tender, drain the spaghetti but keep about 1 cup of that water to use later.
Heat about 3 spoon of olive oil.
Cook garlic until slightly brown, then add beef. Stir.
Add onion and 1 cup of saved water. Stirr and cover.
Add vegetables (carrot,olives and mushrooms) and tomatoes.
Lastly, add parsley, oregano, salt and pepper.
Serve hot with powdered parmesan cheese.

Chicken Chop with Black Pepper Sauce
Thanks to Chef Kamal from 'The Chef Restaurant' in Kemaman for this great recipe.
I'll try to stay as close as possible to the original recipe. (You know, I tend to change other people recipe and create different taste each time I cook the same dish. Sorry guys, can't help it :)
INGREDIENTS
4 boneless chicken thigh - butterfly them and marinate with...
Chili powder
Ground black pepper
Seasoning Maggie
for at least 30 minutes.
BLACK PEPPER SAUCE....
2 cups water
1 spoon ghee or butter (whichever you have)
5 potatoes - peel and cubed
1 cup fresh milk
1 spoon ground black pepper
Seasoning Maggie
3 spoon Campbell mushroom soup
3 spoon Spicy BBQ sauce, Knorr
DIRECTIONS
Boil water in a medium pot.
Add ghee and potatoes. Stir and cover until tender.
Drain the potatoes and put into a bowl. Set aside
Don't throw the water away.
Use about 2 spoons of the cooked potatoes.
Mashed and put back into the pot with the remaining water.
Over medium heat, stir and add all the ingredients.
Adjust the taste.
Mix the potatoes with mayonnaise, or sour cream with chives.
Cook the chicken on slightly greased pan until crispy and the liquid runs clear.
Serve with potatoes and salad. I'll leave this to your own creativity and imagination. Someone famous said, 'the rules for making salad is...THERE'S NO RULES!'

Black Bottom Cupcake
I've got this recipe from allrecipe.com, submitted by Laura Duncan Allen.
INGREDIENTS
1 (250) package cream cheese, softened
1 egg
1/3 cup white sugar
1/8 teaspoon salt
1 cup miniature semisweet chocolate chips
1 1/2 cups all-purpose flour
1 cup white sugar
1/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup water
1/3 cup vegetable oil
1 tablespoon cider vinegar
1 teaspoon vanilla extract
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Line muffin tins with paper cups or lightly spray with non-stick cooking spray.
In a medium bowl, beat the cream cheese, egg, 1/3 cup sugar and 1/8 teaspoon salt until light and fluffy. Stir in the chocolate chips and set aside.
In a large bowl, mix together the flour, 1 cup sugar, cocoa, baking soda and 1/2 teaspoon salt. Make a well in the center and add the water, oil, vinegar and vanilla. Stir together until well blended. Fill muffin tins 1/3 full with the batter and top with a dollop of the cream cheese mixture.
Bake in preheated oven for 25 to 30 minutes.

Tok Mah's Fried Rice
This is one of my childhood favourate dish. (and still does). Thanks to my grandma. It's a bit spicy though. We usually have this for breakfast.
Ingredients...
3 cup Cooked rice
Leftover fried fish - coarsely mashed
10 shallots or an onion - chopped or slice thinly
2 garlic
6-7 dried chillies - blend in a food processor
3-4 tb/spoon vegetable oil
salt to taste
Directions...
Heat the oil in a pan.
Cook chilli, garlic and shallots.
Add fish and mix well
Add rice and cook until the chilli spread evenly on rice
Sprinkle salt and cont cooking untill ur satisfy with the taste.

Fried Popia
INGREDIENTS
Popia shell
1 carrot - parut memanjang
300 gram taugeh (beansprout)
1 packet tofu - drained and mashed
2 spoons dried shrimp
1/2 onion
3 garlic
salt and pepper
2 spoons sesame oil
1 egg white
Cooking oil for deep fry
SAUCE
Excess liquid from cooked filling
2 spoon of ground chillies
1/2 onion
7 cloves garlic
3 spoons brown sugar
vinegar
salt
DIRECTIONS
Blend dried shrimp, onion and garlic in food processor (blender).
Heat oil in a pan and pour the mixture. Stir until quite brown.
Add vegetable and tofu. Stir for about 3 minutes.
Add salt and pepper.
Here's the deal... it will get runny, so put the mixture in a sifter (penapis) to drain the excess water. Use this liquid to make the sauce later.
Take one sheet of the popia shell and spoon the filling onto the edge of the sheet. Roll like an envelope and seal with egg white.
Repeat until finish.
Deep fry, medium heat until golden brown.
As for the sauce, grind onion and garlic together.
Cook the mixture together with chillies, excess liquid, salt and vinegar.
Add sugar, keep stirring until dissolved and the sauce thicken.

Soy ketchup Chicken
This is also a kid's lover dish during mealtime. Hmm... I wonder why kids always like to eat white rice with dark black soy ketchup. Most Malaysian kids do...
Ingredients...
500 grams chicken - marinate with turmeric powder and salt
1 large onion - sliced
3 garlic - chopped
2 inch ginger - sliced
3 potatoes - peeled and make wedges
1 leek - sliced
1/4 cup sultanas or raisin (optional)
3-4 dried chillies - chopped (optional)
7 spoons soy ketchup
1 spoon tamarind paste
1 cup water
3 spoon olive oil
1 spoon sugar
Directions...
Deep fry chicken until browned. set aside.
Deep fry potato wedges until tender. Set aside.
Heat olive oil in a pan. Cook garlic, onion, ginger and chillies until tender.
Add ketchup, tamarind, water, sugar, raisins and leek. Stir.
Add fried chicken and potatoes. Mix well untill the sauce thickening.
Serve with rice.

Homemade Hawaian Seafood Pizza
INGREDIENTS
1 cup flour
1 egg - beaten
2/3 cup milk
1/2 teaspoon garlic powder
1 teaspoon salt
1/3 teaspoon pepper
1 teaspoon parsley
TOPPINGS...
1/2 cup tuna flakes
1/2 cup crabmeat flakes
1/2 onion - diced
1 green pepper - slices
black olives - chopped
pineapple - chopped
1 cup pizza sauce
1 cup shredded mozzarella cheese
DIECTIONS...
In a bowl, combine flour, salt, garlic powder, pepper and parsley; stir in milk and egg. Pour into a greased round caserolle. (or baking pan)
Bake in preheated oven (200 degree celcius) for 15 minutes.
Pour half pizza sauce over the crust.
Layer tuna, crabmeat, onion, pepper, olives and pineapple over the sauce.
Pour remaining sauce and sprinkle with cheese.
Bake again for another 15 minutes.

Telur dadar (Omelet)
This is normally served with white rice. Very easy to make ok.
Ingredients....
2 eggs scrambled
1/2 small onion - chopped
3 chillies - chopped
1/2 teaspoon dried parsley
salt and pepper to taste
Directions...
Heat the skillet/pan with a lil bit of butter.
Mix all the ingredient together.
Pour over the pan, spread evenly but do not stir.
Turn when the egg mixture is no longer runny.
Cook untill slightly brown.

Fried Chicken
Ingredients...
2 boneless chicken thigh, cut into pieces
1 t/s ground chillies
1 tea/s garlic powder
1 tea/s paprika powder
1 tea/s turmeric powder
1/2 tea/s salt
2 pandanus leaves, tear or chopped
1. Marinate chicken with all the ingredients in a plactic bag.
2. Leave overnight in the fridge
3. Deep fry or grill the chicken.

Salmon patties
This recipe is adapted from JoyLee's recipe in allrecipe.com. Got to substitute few ingredients anyway... Thanks for the recipe! Dig in while it still hot and dip in tar-tar sauce or chilli sauce or smokey bbq sauce. Niceee!
Ingredients...
500 gram salmon, chopped
1 egg, beaten
1/2 cup flour
3 medium potatoes, boiled and mashed
1 onion, minced
2 clove garlic, minced
1 celery, minced
4 chilies, minced
1 spoon lemon juice
1 teaspoon garlic powder
salt and pepper to taste
2 tablespoons olive oil
Directions...
1. Heat olive oil in a pan.
2. Mix all the ingredients in a bowl.
3. Scoop the mixture using a spoon into the pan, flatten about 1/2 inch thick.
4. Cook patties until lightly browned on both side.

Nasi Lemak Goreng
Never waste your leftover food or keep them in the fridge for too long. Here is what I did with yesterday's coconut rice. It turns into a fried rice and taste even better!
Ingredients:
Nasi lemak
Garlic - finely sliced
Onion - finely sliced
chilli powder
Soy sauce
Sesame oil - not too much
Mix vegetable
Serunding (dried beef sambal)
Anchovies
Eggs
Salt and pepper
1. Cook garlic and onion in sesame oil until brown and tender
2. Add mix veges and eggs. Stir well until eggs cooked
3. Add rice and remaining ingredients except anchovies. Mix well and constantly fold.
4. Lastly, add the crispy anchovies, mix and serve hot.

Kitchen Disaster!
Yesterday was a total kitchen disaster day! I should have planned earlier about what to cook...Sigh! I took salmon, crabmeat, squid, chicken out from the fridge... Still undecided. Ok, nasi lemak indeed! And put everything back in the fridge except squid.
First, I prepared the rice. It turned out soggy and uncooked. Time is tickling...and we are fasting today. The eggs are supposed to be hard boiled, but when they're peeled, the yolks are still juggling like a jelly.
Peanut! Ooh, they're mostly burned. Sambal sotong? Waah... so sweet and sour!!! (This is what you get when attempting to do your thing while your little toddler is grumpy, clingy and need your full attention!)
Hmm... I don't think i can make it in time anyway, so I grabbed an apple, persimmons and a pear. I peeled and coarsely chopped them together with almond, prunes, raisins and threw everything in one big bowl. Then I spoon a bit of brown sugar, salt to taste and a squirt of lime juice. Toss-toss! Walla! Dessert comes first!
After all the chaotic... here is the result:

Kari ikan buntal
Pergi TRIAL semalam terjumpa pula ikan buntal. Tapi yang dah siap dipotong la. Hanya orang yang berlesen saja yang boleh siang dan memotong ikan buntal ni sebab ikan ni kan beracun. Sebenarnya masa beli tu tak tahu pun tu ikan apa. Hhehehehe... Kebetulan masa pergi pasar dengan Hidayah tadi terjumpa lagi ikan tu. Bila tanya dia pun bagitau, itulah ikan buntal! Ooooo...barulah saye tau...
Bahan-bahan...
10 biji bawang merah - dihiris atau ditumbuk
5 biji bawang putih - dihiris atau ditumbuk
20 gram rempah kari ikan
1/2 biji kelapa - ambil santan
1/2 sudu teh halba
500 gram ikan buntal (dah siap dipotong oleh profesional)
2 biji tomato - potong 4
Asam jawa dan garam secukup rasa
Minyak untuk menumis
Cara-cara...
Tumis bawang putih dan bawang merah sampai naik bau
Masukkan rempah kari dan halba. kacau sampai naik minyak
Masukkan perahan asam jawa dan santan. Kacau dan biar sampai mendidih.
Masukkan ikan dan tomato dan masak selama lebih kurang 10 minit.
Masukkan garam secukup rasa.

Apple pie terbalik
Tiba-tiba ada banyak pulak epal kat rumah ni. Makan camtu je pun boring jugak. So kena buat sesuatulah. Jeng! Jeng! Jeng! Saja je bagi nama pie terbalik sebab intinya ada kat bawah dan tepungnya dituang dari atas. Nak cepat punya pasal lah ni.
Bahan-bahan...
650 gram isi epal yang dicincang kasar
1 sudu gula perang
1/2 cawan kismis
1 cawan gula perang
1 cawan tepung
1 sudu teh serbuk kulit kayu manis
3/4 cawan butter
1 telur
Beberapa titik vanilla essence
Cara-caranya..
1.Panaskan oven dalam 180 darjah C
2.Gaulkan epal dengan 1 sudu gula, serbuk kayu manis dan kismis di dalam caserol.
3.Gunakan mangkuk untuk menggaulkan 1 cawan gula, tepung, butter, vanilla dan telur.
4.Ratakan bancuhan ke atas epal tadi.
5.Bakar di dalam oven selama 45 minit atau sehingga pie menjadi kuning perang.

Rendang daging
Tak kiralah beraya kat mana pun, rendang mesti nak kena buat. Pastu bolehlah makan dengan ketupat atau nasi impit. (hentam sajalah labuu...) Resepi ni saya ubahsuai dari Adabi. Senang jee..
Bahan-bahan...
60 gram rempah rendang daging
1 kilo daging potong kecil2
3 biji kelapa (dibuat kerisik)
1 biji kelapa (ambil santan anggaran 8 cawan)
Kisar dengan air ... 30 biji bawang merah
6 batang serai
2 inci halia
2 inci lengkuas
5 helai daun kunyit dihiris
4 helai daun limau purut dikoyak2
Air asam jawa
2 sudu gula perang
Garam secukup rasa
Cara-cara memasak...
Panaskan kuali.
Masukkan daging, santan, rempah dan bahan yg dah dikisar.
Kacau sebati sehingga daging separuh empuk.
Masukkan kerisik, garam, gula, air asam jawa dan daun kunyit.
Kacau selalu supaya tak berkerak.
Bila dah hampir kering baru masukkan daun limau purut dan kacau sampai kering.

Kuah kacang nasi impit
Resepi ni saya dapat dari sini. Terima kasih lah ye Rin. Ni pun first time buat kuah kacang.
Bahan-bahan:
500 gram kacang tanah,
digoreng tanpa minyak dan dibuang kulit
Dikisar dgn air:
7-8 batang serai
3 inci lengkuas
15 biji bawang merah
5 ulas bawang putih
2-3 biji buah keras
20 tangkai cili kering, direndam
Segenggam udang kering, direndam
3 sudu besar asam jawa, dibancuh pekat
5 sudu besar gula merah
4 sudu besar gula perang
Garam secukup rasa
3-4 cawan air
Minyak untuk menumis
Cara-cara:
1. Tumiskan semua bahan kisar sehingga naik bau dan agak masak.
2. Kisar kacang tanah. Separuh kasar dan separuh halus.
3. Masukkan air asam jawa dan air. Kacau sekali sekala sampai mendidih.
4. Masukkan kacang tanah, gula dan garam.
5. Adjust rasa kalau perlu.
6. Kacau sekali sekala sampai agak pekat.

Lasagna
Semalam terasa nak makan lasagna. Kat Jepun ni mana nak cari lasagna yang halal... Hmmm...nak tak nak kenalah masak sendiri. Hasilnya inilah dia... my first lasagna! Tapi kat dalam gambar ni, lapisan atasnya saye dah sudukan lebihan sos daging.
Bahan-bahannya...
6 keping lasagna noodles
500 gram daging cincang
1 labu bawang besar dicincang
3 ulas bawang putih
1 tin tomato puree atau sos spaghetti
1 sudu parsley kering
1/2 s/teh oregano kering
1 sudu gula
secubit garam
serbuk lada hitam
1 telur
100 gram keju ricotta
1/2 s/teh basil kering (daun selasih)
1/2 s/teh serbuk bawang putih
50 gram shredded keju mozzarella, bahagi 2
1/2 cawan keju Parmesan(grated)
Cara-caranya...
Panaskan oven dalam lingkungan 175 degrees C.
Rebus kepingan lasagna dalam air yang dicampurkan secubit garam, sampai lembut. Toskan dan lalukan dengan air sejuk.
Dalam satu mangkuk, pukul telur dan campurkan ricotta, basil, serbuk bawang putih, oregano dan separuh mozarella. Kacau rata dan tepikan.
Dalam kuali, masak daging, bawang, bawang putih. Masukkan tomato puree. Tambahkan basil, parsley, oregano, lada hitam, gula dan garam secukup rasa. Sekali sekala kacau sampai masak.
Dalam baking dish, ukuran 9x5x3 inci, ratakan sedikit sos daging.
Lapiskan dengan 1 lasagna noodle.
Ratakan campuran keju ricotta, sos daging dan 1 lasagna noodle.
Ulang sampai habis semua 6 keping noodles tu.
Atas sekali, ratakan mozarella dan parmesan.
Cover dengan foil. Bakar selama 30 minit.
Alihkan foil dan bakar lagi selama 15 minit atau sampai keju kekuningan.
